Might be possible just by changing WCS configuration.

According to this answer, it's not possible to change it by configuration.

hmm, can we create "aggregated" rest call to retrieve all by ourselves then?

Actually, the forum post I've found is outdated and there seems to be a way to set it up:

This API will return all products under this category and does not return products under any subcategory by default. To enable deep search for searching products in all subcategories, the category being searched must be enabled using the Expanded category navigation store function in the Management Center.

When we set it, it does change the behavior on (theirs) AuroraESite webapp, but the REST responses remain unchanged.

Doesn't work on root category (because there's actually no root category in wcs, just Top Categories).
